Comme Ça The Comme Ça Burger (Los Angeles)

Colonel Mustard

$18 This burger beautifully showcases the subtle art of medium rare perfection and is served with a silver bucket of fries. So simple. So right.

Burgerac's NYC correspondent, Colonel Mustard, recently found herself in LA on a flying work visit. Needless to say she took the opportunity to check out a burger or two. First on her list: the fabled burger at David Myers' West Hollywood restaurant...

You could go ahead and assume that a chef who grew up in Ohio would know his way around a burger. A state known for agriculture and backyard barbecues, burgers are a staple part of Ohio's food culture. But what undoubtedly makes chef David Myers' Comme Ça cheeseburger so extra-specially good is the years he spent under the tutelage of revered chef Charlie Trotter and then Daniel Boulud — a man with a reputation for serving up one of the best burgers in the world.

Our visit to the L.A. locale was nothing short of perfection. With sun streaming in through the windows, we sipped on some super tasty cocktails, namely The East End (a blend of Gin, cucumber and mint) as we waited for what would be one of the most delectable cheeseburgers I've ever had. Myers' straightforward approach to the CÇ burger allows the natural flavors to really shine as it just melts in your mouth. Seriously, I'm pretty sure it melted...

The man has mastered the art of medium rare. The thick Angus patty is a rosy pink throughout, squeezed between two toasted buttery buns and topped with melted Vermont cheddar, shredded lettuce and mayonnaise (not a condiment Colonel Mustard typically allows!). The bottom bun ends up just right — it's soaked in juicy burger goodness but doesn't fall apart on you.

The bona fide burger is served up with a silver bucket of delicately fried French fries, adding to the straightforward but fancy vibe. Like the cheeseburger, the fries are perfectly balanced, but in this case they deliciously teeter between crispy and tender. In addition to texture, they have just the right amount of salt on them, and You almost don't mind that there's no ketchup on offer..... Almost.

Myers definitely gives Boulud's "original DB" $32 truffle and foie gras burger a run for its money. And while The $18 Comme Ça burger doesn't have the addition of those two rich delicacies, the beauty is that it really doesn't need it.
